This chia lemonade with mint is my version of another one I love to get from a great café in downtown LA called Market. Their version is blended with ice, but I prefer to take a less is more approach to cooking (the less ingredients and the less manual labor the better!) I also modified their version to make mine healthier by sweetening with honey rather than sugar. The combination of lemon juice, honey, and mint makes for a really refreshing and energizing drink in the afternoon that’s a lot better for you than coffee! And that was even before I started singing the praises of chia seeds, which are full of omega-3, protein, antioxidants, calcium, and fiber.
P.S. I like mine extra minty. But when you make the recipe, don’t be afraid to play around a little bit with the measurements, because everyone’s taste is obviously a little different.
P.P.S. You could still add to a blender with ice for a really special treat like the Market version if you’ve got a little more time on your hands (and a blender, of course).
